This washed Pink Bourbon from Finca Satus reflects the meticulous, variety-focused approach of producer Bryan Smith in Pitalito, Huila. Grown between 1,500–1,850 masl, where warm days and cool nights slow cherry maturation, the altitude supports the development of sweetness, aromatic lift, and refined acidity before processing begins.

Cherries are selectively harvested at peak ripeness and undergo a clean, carefully controlled washed process. Fermentation is managed to preserve structure and brightness without sharpness, followed by thorough washing to maintain clarity. Drying is closely monitored to protect delicate aromatics and stabilize moisture, allowing the varietal’s natural sweetness and floral character to remain fully transparent.

The result is a cup that feels vibrant yet composed, expressive without excess.

In the cup, expect clementine and lemongrass brightness balanced by fresh sugarcane and caramel sweetness.
