Our chocolate batons are extruded on the same machine we make our chocolate chips on. We use a special depositing plate that creates thin strips of chocolate weighing approx 4-5g each.
We make a 55% chocolate for our batons. It holds shape well when heated so the chocolate keeps inside of your pastries. The chocolate is vegan and free from allergens.
We stack these batons in boxes of 6kg, nicely aligned for easy use.
The shapes are very similar, but there is some variance due to the nature of depositing this style of chocolate.
